You really can choose what you like in this combo – it’s super easy and a good ol’ veggie drawer clearer!
We grilled sweet capsicum & zucchini slices, eggplant slices and tomato slices and simply stacked them on top of each other, drizzled with olive oil, salt and pepper and garnished with basil. You might like to eat this alongside a basic green salad dressed with apple cider vinegar and olive oil.
