Good Food Friday: My veggie stir-fry

You know – your body likes a rest every now and again.  This extends right through to your digestive system.  My cleanse, which kicks off this coming Monday the 3rd of February is just like a little holiday for your insides.  Registration ends 6pm TONIGHT – so if you find yourself fighting the post Christmas bulge or you feel sluggish, tired and all round weighed down, THIS is for you.  You can find out all about it here.  But for today, I’m sharing my veggie stir fry which features in the Gentle Body Cleanse 5 day Menu plan this time around (yes I even give you a menu!).

 

Veggie Stir Fry

Serves 4

You can really use any combo of veggies for this – the more colourful the better as far as I’m concerned!

1 red capsicum thinly sliced

1/4 red cabbage, thinly sliced

1/2 red onion, thinly sliced

1 bunch broccolini

1 zucchini thinly sliced

1 carrot, thinly sliced

2 tbs coconut oil

1 tbs honey

2 tbs soy sauce

Coriander to garnish

Avocado as a side serve

Prepare vegetables by slicing everything before you’re ready to cook

Add coconut oil to the pan

Add carrot & zucchini and fry off first as they take a little longer. Add capsicum, onion and cabbage and stir-fry for 4-5 minutes or until just cooked.

Take off heat and drizzle over honey and soy sauce and mix  through well.

Top with coriander.

Enjoy with a dollop of coyo and a side serve of avocado.
