Good Food Friday : Radish Tzatziki

I’m such a Tzatziki fan, it’s bordering on obsession. When I was in Greece a few years back, there was not a day that went by, I didn’t eat a serve, all to myself at every dinner. I love yoghurt and therefore, I love Tzatziki. And so, when radishes arrived on my doorstep this week, I thought I’d try out this old time favorite and ad a twist. RADISH!

Radish is high in folate – music to any expecting or trying mothers ears. High also in potassium, magnesium, vitamin B6, copper and calcium makes radish an excellent ingredient to improve semen quality (and funnily enough, the do kind of look like sperm). If you’re not too keen on the little kick they give, this is the perfect recipe for you – the yoghurt nicely balances the flavours and turns down the bite.

Radish Tzatziki

200 – 300ml of natural greek yoghurt
5 radishes, chopped into 1/4
1 lebanese cucumber, chopped
juice of 1/2 a lemon
rind of 1/2 lemon
3 tbs extra virgin olive oil
generous pinch of salt
mint to garnish

In a food processor (or you could grate), combine the radish and cucumber and very roughly chop. Squeeze out any excess liquid.
Place in a bowl and add yoghurt. Combine.
Add lemon juice and rind, oil and salt and stir well.
If the mix is too runny – add a touch more yoghurt.
Garnish with mint and cracked pepper – serve.

    Nat – I am guessing this is full fat yogurt? I now want some Tzatziki!! 🙂

      always full fat – low fat is high sugar and empty nutrients. Go get some tzatziki on your plate!
