Great things have been happening in The Pagoda Tree family this week which has left me little time to prepare a Good Food Friday treat for you! But Martha goes green has come to the rescue. If you haven’t met Martha yet – she is a gorgeous cookbook that we have in the clinic for you to purchase ($24.95 plus postage). We can’t keep enough of these in stock – they literally walk out the door. We have featured several of the recipes here on the blog. Today we are sharing this great dessert – gluten free and all that jazz!
Chocolate tofu mousse
vegan : gluten free : serves 4
200g silken tofu
250g vegan chocolate, melted
2 tsp pure maple syrup
2 tsp peanut butter
to serve
grated chocolate
Blend all ingredients until just smooth, be careful not to overmix. Pour into jelly moulds, small dishes or glasses and garnish with grated chocolate.
Refrigerate for a few hours until set.
