Ever get stuck on what to make for a winters lunch? Soup is really quite quick to make and Mushroom Soup made its way to my table this week. Really you can add whatever you like to make your own version – a great way to keep getting in the good stuff that counts.
Awesome Mushroom Soup
10-12 medium sized mushrooms of your choice (I used field mushrooms) – roughly chopped
2 onions diced
2 potatoes – peeled and chopped
2 cups of water
Salt and Pepper to season
Oil (several tbs)
Heat oil in an appropriate pot. Once hot, add onion and cook until clear.
Add potatoes and mushrooms and toss around for several minutes until well coated with oil.
Season with salt and pepper.
Add water and stock and allow to simmer for 20-30 minutes.
With a stick blender, blend well.
Garnish with parsley – serve with toast.
