It’s no secret I love food. What I love most is food that is busting with fresh flavour like my Salsa. Proper Mexican food is on the top of my list – it ticks all the boxes of fresh, bright and awesome.
My Aussie Farmers Box this week was screaming for me to put all this together – we had the herbs, we had the tomatoes and we had the avocado – and who am I to say no? So here you have it – Seriously awesome Salsa.
You can serve this many ways. It’s awesome to use as a dip along side sour cream when entertaining. This week I used it as a side serve to Burittos. Whatever you choose – it’s delish!
Seriously awesome Salsa
3 tomatoes diced (most recipes remove the seeds – I love these the most. You can decide what suits you best)
1 bunch of spring onions, chopped
2 avocados – seeds removed (but kept) and chopped into chunks
1 bunch of coriander (cilantro)
the juice of 1 lemon
salt, pepper and oil to season.
Combine ingredients in a bowl.
Squeeze over the juice of one lemon.
Drizzle with oil, season with salt and pepper and stir.
Put the avocado seeds back in the mix to prevent avocado from going brown.
Let it sit to combine the juices for 30 minutes.
Just before serving, remember to remove the avocado seeds to prevent a trip to the dentist!
