Good Food Friday: Claire Baker’s Guilt Free Choc-Berry Mousse!

I had the pleasure of meeting this beauty in the flesh a few weeks ago at my Debunking Ovulation event in Perth (actually as you read this I’m on my way to SYDNEY!!  Still a couple of tickets left here if you’re keen to change your life).  Claire is a true beauty, the creator of This is Lifeblood, and an inspiration to women and I’m so glad to now be able to call her a friend!  But for today get a load of her Choc-Berry Mouse!!

There are only 5 ingredients in this mousse. All natural. All nourishing. All delicious. It takes minimal time to prepare, lasts for a couple of days in the fridge (if you don’t eat it all by then) and is ultra-flexible in it’s potential for experimentation, meaning you can add whatever your heart desires really…

Nuts? Sure. Coconut? Absolutely. Goji berries? Get those shriveled little red babies of fun in there!

You will need

1 medium ripe avocado

1/2 cup raw cacao powder

1 tbsp raw honey

2 tbsp coconut cream (full fat)

1/2 cup frozen mixed berries

What to do

In a blender or food processor, blend the avocado, cacao, honey and coconut cream on medium speed for a minute or so or until all combined and creamy-looking. Add a bit of water if you need to and more honey if you like it sweeter. Then stir through berries and pour into glasses to set in the fridge. You could also freeze this in Summer to make a yummy, nutritious ice cream. Enjoy!

Serves 4.
