Excellent! It’s Friday. This week I was lucky enough to be paid a special visit by my Dad. And so I quickly put together this simple (and gluten free) dessert as a after dinner treat. It’s a great winter warmer and ready in 20 minutes.
I took it straight out of Donna Hay although I modified it to eliminate the sugar.
Baked apples my way
4 green apples, de-cored and peeled
1 cup mixed nuts (I used roasted almonds, walnuts and a cranberry mix) chopped.
100gm melted butter
1/2 cup maple syrup
Method:
Prepare apples and set aside.
In a bowl combine 50gm of the melted butter with the nuts and maple syrup.
Carefully cut the apples into 3, crossways so that you can stack each piece back on top of the other to make it look like an apple again.
Line a baking dish with baking paper and carefully, place the first piece of apple on the paper, topping it with the nut mixture. Place the next segment of apple on top and repeat process a further two times to complete one apple. Also top with a little extra nut mixture. Continue to do this for the other 3 apples.
Once finished, use left over melted butter to drizzle over the top and place in a pre-heated oven at 180 degrees.
Cook for approximately 15 minutes or until apples are soft.
Enjoy with a generous dollop of double cream.
