Don’t you just love a pull together recipe? This was one of those. Baking up a storm before the kids went back to school – pulling every stop out of my pantry until I darn well made something these little mites would eat! Turns out – the staff at the clinic made sure there were none left at all! Anyway – let’s not go on about my awesomeness, let’s share this recipe shall we!?
Chunky Muffins!
Makes 12 smallish muffins
1 & 1/2 cups of spelt flour (for a gluten free option you could try buckwheat or almond meal)
2 tbs of soaked chia seeds
3 tbs coconut butter
1 egg
4 tbs of coconut flower nectar (also called coconut nectar)
1/3 cup of cacao butter
1/2 cup of dark chocolate chopped into chunks
2 tsp of baking powder
2 tbs of apple cider vinegar
Simply combine the ingredients in a mixer. Pour batter into cupcake cases and bake in a moderate oven (180 degrees) for 20 – 25 minutes.
These will keep for 5 days.
