WHAT THE ACTUAL!? These look flipping delicious. My Goodness Organics have come to the party today with this beautiful recipe. These look similar to our Amazeballs – but really they are like a grown up version, adding the delicious benefits of protein powder with less fructose by removing dates and adding in other goodies. In any case, it just goes to show how creative you can be – and equally how you can be best inspired by awesome people like Bec to get into the kitchen and change it up! These can be made and kept in the fridge meaning YOU can pop this on your Sunday ‘to do’ list to set yourself up for the week ahead. Almond Butter Protein Chews
These are awesome as a pre/ post workout snack thanks to a solid hit of protein per ball, antioxidants and plenty of muscle repairing minerals such as calcium, magnesium and amino acids. The recipe makes 20 golf-ball sized chews in about 10 minutes!
Ingredients
1 cup organic almond butter or your choice of nut/seed butter.
2 tsp pure vanilla extract
1⁄2 cup puffed rice
1⁄2 cup puffed quinoa
1⁄2 cup puffed amaranth
1⁄2 cup puffed millet
1⁄4 cup Vanilla Protein Powder (we use Sunwarrior Vegan Blend)
3/4 cup organic brown rice syrup or coconut nectar
1⁄4 cup pepita
1⁄4 cup chia
1⁄4 cup hemp seed
1⁄4 desiccated organic coconut or blitzed coconut flakes
1⁄4 cup sunflower seed roughly chopped
1⁄2 cup of your choice of inca berries, goji, cranberry, dried blueberry or dried cherries.
1tsp cinnamon
pinch salt
Directions
Line a tray with baking paper.
Mix all dry ingredients together in a large bowl.
In a medium saucepan over low heat, stir together the almond butter, brown rice syrup, and vanilla.
Once melted and loose, immediately pour over the dry ingredients and begin to mix.
Start with a spoon and then use the hands to incorporate well. It should begin to clump and stick together.
Wet hands thoroughly and shape the mixture into ‘golf-balls’. Press mixture together firmly so it will hold.
Wet hands after each ball is formed so the mixture doesn’t stick to your hands.
Place the balls onto baking paper and freeze when done to harden. Once they are set firm they can be stored in the fridge
