This recipe created by Nicole Beardsley from The Happy Parent Project allows you to eat the traditional Aussie favourite – Jelly Slice- whilst nourishing your gut at the same time! It includes gut nourishing coconut oil in the base, probiotic yoghurt in the creamy centre and gut nourishing and sealing gelatine in the sweet topping. You can use the yoghurt recipe from Nicole’s Natural Living DVD for a super probiotic punch!
INGREDIENTS
Biscuit Base
1 cup shredded coconut
1/2 cup sunflower seeds
1/2 cup cashews
6 Medjool dates
1 tsp vanilla
1 Tb coconut oil, melted
Pinch Himalayan Salt
Cream Cheese Filling
1 litre homemade or high quality plain yoghurt
Zest and juice of 1 lemon
6 tsp Gelatin
1/4 cup honey
Jelly Topping
1 cup frozen mixed berries
1/4 cup water
1/4 cup honey
1/2 cup fresh strawberries (optional)
Juice of 1 lemon
3 Tb Gelatin
Instructions
For the base
- Blend the coconut, cashews and sunflower seeds for 1 minute
- Add the dates and blend for 1 minute more
- Add all other ingredients and blend until the dough comes together
- Press the dough into a greased baking dish and press down firmly
- Place into the fridge to set
For the filling
- Overnight: Place a sieve over a bowl and line it with a clean teatowel or cheesecloth
- Pour the yoghurt into the sieve and allow to drip overnight in the fridge. In the morning you will be left with cream cheese
- Don’t throw out the whey – keep this in a jar in the fridge to use for activating nuts or fermenting veges
- Place the cream cheese into a food processor and add the rest of the filling ingredients.
- Blend well then pour over the top of your base
- Cut up the strawberries into thin slices and arrange over the cream cheese topping
- Place back in the fridge to set
For the topping
- Place all ingredients except gelatin into a saucepan and gently heat until soft, but do not boil
- Add this mixture to your food processor and add the gelatin
- Blend until the gelatin is mixed in thoroughly
- Allow to cool slightly then pour over the cream cheese filling
- Place back into fridge and allow to set then cut into squares
