Good Food Friday: Amy’s Easter choc nests and Fig & Walnut ‘eggs’

She’s not only one of my talented PA’s, she also gives Jamie Oliver a run for his money!  These are Amy’s solution to Easter!  So delicious, so nutritious. It’s a match made in chocolately fig heaven.

Nests (makes 5)

1 cup of Almonds, blitzed a food processor to make a rough, crushed up consistency.

1 cup shredded coconut

1 tsp cinnamon

1 tbs coconut butter

1 block of 85% dark chocolate ( I used Lindt )

 

Mix all ingredients except the chocolate in to a large bowl. In a small saucepan, over low heat melt the chocolate, stirring consistently to avoid the chocolate burning. Once melted pour over the other ingredients. Stirring until chocolate is mixed completely through. Let mixture sit for 5 minutes to allow the chocolate to cool slightly within the mixture. Following this use olive oil to rub the edges of muffin tray cups. This will allow easy removal of the nests once set. Using a tablespoon, spoon the mixture in the muffin tray, using your fingers to shape and press gently in to the edges to form your nest. Once you’ve done all your nests, place in the fridge for an hour to set. Once set, you can slide a butter knife down the edge of each nest and it should slip up out of the tray.

 

Fig & Walnut ‘Eggs’ (Makes approx 35)

14 dried figs, (approx 170g)

100g Cacao butter

1 Cup of shredded coconut

1/2 cup chia seeds

1 cup walnuts

 

Blitz all ingredients in a food processor until you have a sticky, well combined mixture. Take the amount you want in to your hand rolling in to balls.

Place three balls in each nest and your done!
