Lime & Coconut Delight

Spring is here and it’s time to Cleanse!  And with recipes this delicious, you’ll wonder why it took so long to get into the spirit of a gentle spring clean.  This recipe is extremely versatile and I’ve included some great variations below so you can serve it up just how you like it.  This beauty is one of the featured breakfast recipes found in the NEW Spring 2015 Cleanse Menu set to launch next week.  If you’ve followed the Cleanse Yourself program before, you might be excited to know there is a new menu on it’s way (chances are you’ve followed the current menu more than once!)

serves 4

 

1/2 cup chia seeds OR gelatine dissolved in warm water (the cleanse menu includes chia)

1 can of coconut cream

Juice and zest of one lime

1/4 tsp of vanilla bean

3 tbs of honey or rice malt syrup

 

If you have a thermomix you can very easily make this recipe in a 2 step process.  For those not using a thermie, do not despair, I’m here for you!

Place the coconut cream into a saucepan and begin to warm.  If you are using chia, you can add and mix well and continue to add the rest of the ingredients until well combined.

If you are using gelatine, add in the vanilla, sweeter and lime and combine.  Finally mix in gelatin and allow to thicken, continually stirring.

Pour mixture into moulds and place in fridge to set.  The gelatine version will take a couple of hours, the chia will be ready immediately and I recommend you served warm.

You might like to shake it up, you could make a chocolate version by adding cacao (and eliminating the lime), banana, berries or stewed apple.  In any case, it’s a delicious dessert (or breakfast) the entire family can enjoy!

      Just as sachet with a small amount of water to dissolve.
