I’m a big fan of the gorgeous woman behind this recipe – Lee Holmes! You may have seen her around the traps here, on my site (remember she made chai custard!) But today she’s sharing her Garlic and Rosemary Chicken – AND keep reading to find out about ‘friends gather round’ a project that helps you learn even more about wellness!
Garlic and Rosemary Chicken
5 cloves garlic
Sea salt and pepper
2 bunches fresh rosemary
1 lemon juiced
1 lemon sliced
3 daikon cut into fries
Preheat oven to 350 degrees
Place chicken in roasting pan and cover with sea salt, pepper, lemon and sprigs of rosemary
Place garlic cloves sliced into the chicken skin
Take 3 whole large cloves of garlic with skin on and place in pan and place daikon in pan too
Roast in oven at 220 degrees Celsius for 1 hour 20 mins
Remove from oven and serve with cauliflower mash, steamed broccoli and daikon fries
