Good Food Friday: Vegie Head’s Green split pea, coconut & vegetable soup

Some of you have been doing my Gentle Body Cleanse this week and LOVING it; telling me how amazing you all feel. I love so much how incorporating simple, wholefoods has a massive impact on our bodies. For those of you who haven’t been able to join in the fun, stay tuned for another cleanse in coming weeks! Now here’s a recipe to knock your socks off and equally one to tick off boxes for EVERYBODY, cleansers included! So to go out with a bang or to put a bit of bang into your weekend, get onto this AMAZING Green Split Pea, Coconut and Vegetable Soup by my wellness babe and co-host of season 3 on healthtalks, Adele from Vegie Head.

Green Split Pea, Coconut and Vegetable Soup

1 tbsp coconutoil
1 large onion, diced
1⁄2 tsp ground turmeric
400ml coconut cream
400ml crushed tomatoes
1 cup green split peas
1 zucchini, sliced
1 cup silverbeet, roughly chopped
Salt to taste

To Serve

Fresh lemon juice
Fresh coriander, chopped
In a large soup pot, heat the coconut oil, and sauté the onion until translucent. Add the turmeric, and stir, then
pour in the coconut cream,crushed tomatoes, split peas and zucchini. Bring to a gentle boil, then add the silverbeet
and simmer on medium-high for 30 minutes. Add the water if needed and stir regularly. Add the salt, and serve with
a squeeze of fresh lemon juice, sliced chilli and coriander.

Serves 4.
