Good Food Friday : Lana Purcell’s Healthy Chocolate Crackle Bar

Oh em gee! How much do I love this beauty. Lana Purcell is an amazing influence in the wellness industry – and goes by the title of “the healthy life-stylist.” She is one very clever woman and we’re going to learn a whole lot more about her in coming weeks! But until then – we want to keep your tastebuds satisfied so here’s her famous Healthy Chocolate Crackle Bar!

Long gone is the sugary milky bland chocolate in the fridge or cupboard. With a sweep of the cupboard and a sweet treat craving this little baby was born. Enjoy responsibly, share with the kids only when necessary.

Healthy Chocolate Crackle Bar

3/4 cup of walnuts
1 big tablespoon scoop of almond butter
1/2 cup of raisins
2 tbsp.of flax meal
2-3 tbsp. of pure maple syrup

Process together till it just starts to stick and clump, add more liquid if too dry, add more solid if too wet and not clumping.

In another bowl pour

1 cup of shredded coconut
1 cup of puffed rice.

For the chocolate binder

1 cup of melted coconut oil
3/4 cup of maple syrup
1/4 cup of raw cacao powder.

Add all three components into the same bowl and combine.

Place into a small lined baking tray and place in the fridge to set.

Slice into squares and enjoy!
