Good Food Friday: Angeline’s Coconut Almond Cookies

Coconut Almond Cookies

{ANGELINE} I love cookies but most of the ones you find on the supermarket shelves have vegetable oil and lots of sugar in them which aren’t great for your health so I decided to make some healthier ones and I’m pretty darn happy with them!

I get such a kick out of making a dessert that I know won’t interfere  with my goals, tastes great and satisfies my sweet cravings because let’s be honest we all get them, it’s just making sure you have the right food in front of you and you’ve prepped and planned so you stay on track.

Having recently becoming a new mum I’m even more passionate about what I eat because I know my little Harvey will benefit from it and to make sure I give him all the nutrients he needs to grow big and strong and to build a strong immune system to prevent against getting sick in the future. I want him to know the true value of good quality food and to know how important it is for our overall health and wellbeing.

Ingredients:
Makes 12 Cookies

  • ½ cup desiccated coconut
  • 2 tbsp sunflower seeds
  • 2 tbsp almond meal
  • ⅓ cup rolled quinoa flakes (can use rolled oats instead)
  • 1 cup dried fruit (I used currants)
  • 1 tsp vanilla essence
  • 2 tbsp nut butter of choice (almond or cashew nut works well)
  • 1 tbsp organic rice malt

Directions:

  • 1. Preheat oven at 100 degrees celcius.
  • 2. Add all ingredients to a food processor and pulse until sticky when pressed between the fingers. Add a little bit more maple syrup if the mixture does not stick together.
  • 3. Line baking tray with baking paper.
  • 4. Scoop 1 tbsp of the cookie mixture, roll into balls and firmly press almond into the cookie dough. Repeat with the remaining cooking mixture.
  • 5. Bake in the oven for approximately 30 mins.
    6. Keep the cookies in an airtight container. These will last for a week.
